Having some knowledge of the flight schools in BC I highly recommend Island Coastal Aviation Inc. and I don't recommend Canadian Flight Centre.

Essentially there is not much difference between two approaches. Just like FTU instructors, freelancers would follow the same PPL curriculum. What you need is a good and honest instructor and a safe aircraft. The set up of the things is secondary. The reason for 2-hour blocks at most schools is that...

If you are happy now, why change it? What makes you think that a private instructor would never be busy with another student or take a day off, or that the other pilot would not take the plane on a day that you want to fly? I could give you a few names, but none of them would be interested in teaching towards a Private licence. Really good instructors are usually quite busy giving advanced instruction. I highly doubt anyone can teach you both Multi and IFR within 5 hours.
In any case, stay away from big MIFR puppy mill schools. They have programs that they usually stick to. Go to a small school, they would be more flexible and would offer you training customized to your needs.
