If you're going to use those Frixion (erasable) highlighters, don't leave your map in the plane on a hot day. I was warned that it's the heat generated by the friction that erases it so your track lines can disappear if left in the sun.

I didn't use an online course but one book I found extremely helpful was Instructor Prep by Dale Neilsen. It's written really simply and has lots of good (applicable) information in one place.

There is a flight school in Fredericton, NB that has a joint BBA-Aviation training program with UNB-F. They'll do only flight training as well if that is what you're interested in. I think Metal was being sincere and raising a good point. Losing your Cat 1 means no more commercial flying and no more paycheck. And the circumstances for losing it aren't always "extremely rare". The University of New Brunswick has a good aviation program. You can get a degree in business administration while getting your CPL, night, multi, IFR.
