The AOC specifies the number of crew members, which must then be reflected in the COM. The operation must also have SOPs to operate 2 crew. The qualifications of the crew (like the F/O having a PCC or PPC and the PIC having a PPC) are outlined in CAR 703.88.

If fun is the goal, go fly with an instructor, go have fun. But, I agree with Bede, that older people pick up the skills more slowly, and are more prone to errors. One thing that VFR traffic can sometimes forget is to watch out for the IFR guys, who may be joining straight in off the IFR approach, even at a non-MF airport.
