local flight school or university program?

hello my name is Salah from Edmonton, Alberta pursuing a career as a pilot. I'm planning on starting flight school in a month or two but I have two paths in mind to take and hoping to get some feedback on which one would be a better option. I'm looking at either doing an aviation diploma program at a university in Canada or looking to get my licenses at a local flight school and get a diploma as an aircraft maintenance engineer to use as my education background when applying for major airlines. Would it be better to just do the aviation diploma or get my licenses and get a diploma as an AME? will the AME diploma help me to land a job with a major airline like air Canada as I know they require an education background. Thank you!
