I enjoy "Pilot to Pilot". You can sift through them to single out some Canadian bush ones. My favorite right now is "On the Step", its a seaplane podcast, but has a few interviews with some Canadians and float flying here in Canada. Cheers

I enjoy "Aviation News Talk". I find it's consistently good quality.
I've listened to a couple "Flying BC" episodes and it was decent. I should download more of these.

This one is more for the Mechanics and Maintenance folks... it's by a couple of Americans but it's been entertaining.

A USAF F-35 fighter pilot does this one, and it's not always about aviation, but rather about professionals at their craft.
One of the recent ones was an interview Terry Virts (F-16 -> Shuttle -> ISS). A real professional at his craft.

Re: Podcasts
I’ll second the On The Step. Great podcast, lots of variety in float and flying boat guests.
