I applied 3 times at around 2300-2400 TT. Never got a call
I also don’t speak French so maybe that’s why..?

That's plenty for Sunwing these days ... probably 1,000 hours more than needed

If you went to an aviation degree program you shouldn’t have an issue with those hours, I have not heard of anybody getting hired under 1500 hrs at SWG without a degree. 1500-2000 maybe. 2000 is pretty much the norm pre pandemic, not sure if they're going lower now?
No need to be bilingual, being able to say a few words in french is a big plus though.
Lastly, internal references get called first, don't give up.
