If the engine is not shut down it is considered 1 leg. Otherwise you are supposed to enter it as separate flights. Some flight training units are allowed to enter the total number of flights on one line and simply enter the total time for the day on that line.
Other ops may have similar exceptions.
If you don't have the exemption you should be doing one line per flight.

(2) No person shall make a single entry in a journey log in respect of a series of flights unless
(a) the aircraft is operated by the same pilot-in-command throughout the series; or
(b) a daily flight record is used pursuant to section 406.56.

Flown at several different operations. At all of them we just entered one line for the day in the journey log for the same pilot and same in the personal log. Never had an issue. If any issue the daily totals will be backed up by the ofp's for the day.

Several years every place I've worked. Usually put into bankers boxes and such.
