Because according to a U.S. military study done over the span of their helicopter use, the survivability is increased roughly %80 if wearing a helmet that provides adequate side impact protection. Unlike an airplane that just smears you across four hundred yards of crash site, helicopters usually hit the ground/water/trees at low forward speed, but roll over because the Transmission/Engine/Rotors make them top heavy. Once the blades start contacting the ground or trees, the accident can get very dynamic resulting in the pilot being thrown around violently. That's the short answer.
Yes, they are also MUCH quieter than a headset, and properly fit, more comfortable too during a very long day. For any door off Vertical Reference work they are a must as the effect of down wash, dust, etc is reduced. Some of the older crowd don't wear them, but most pilots in Canada have a bucket on.

According the the NTSB, the Bell 2o6 series helicopter is the safest single engine aircraft. Yes AIRCRAFT, that includes fixed-wing as well.
Over 32,000,000 flight hours.
Not bad for 10,000 bits rotating in tight formation.
