Just got the iPhone4 as my Blackberry Curve finally died.
Some of the useful Aviation Apps I've found:
- Aeroweather (Mentioned already but get it!)
- iDispatch (Enter an Airport Ident and it'll tell you IFR/VFR and alternates within 150nm)
- iE6B (Self Explanatory, good interface.)
- xWind (Computes Crosswinds and shows you the components on an A/C Diagram)
- Jet Fueling (I use it for computing payloads.)
These are all free and have been working great for me so Far.

Another great one I've been using a lot is PilotWiz. Free and pretty much a one-stop-shop for flight planning.
Text weather is better than AeroWeather, because it refreshes automatically.
Weight and balance. Just plug in the C of G points from your POH or the Type Certificate Data Sheet and you've got yourself an envelope. Does zero fuel and landing weights as well.
Fuel in any units, it converts automatically and applies it to the weight and balance and the endurance of the aircraft.
Another great one is Radar. It just pulls up the Environment Canada site, but for in a plane with service it sure is nice to pull that imagery with the press of a button and have a sight picture.

Not an aviation flight planning app but still can't belive noone has mentioned X-Plane 4G. Check it out, you will not be disappointed!

I bought it and had it on my iphone for a while. It's an impressive app, but really, it's far too big (file size). On more than one occasion, the app tried to update itself when I was at a location with a very slow connection, and caused the phone to lock-up.
On the iphone, its a neat toy, but not really that playable. That said, I'd certainly give it another whirl if I had an ipad.
