I don't think anything has changed, in fact, probably got worse with airline guys returning to other sectors.

Probably correct, supply and demand dictates bonds. Why invest in someone when there’s several previously endorsed candidates out there

Which is baloney since your operator wrote off your training before you even showed up and is currently sipping mai tais in the carribean courtesy of your bond money.

Someone correct me if I am wrong, but if you had to pay your bond out, it is tax deductible... Consulting a tax lawyer or accountant is obviously the way to go about it in all fairness...

I'm pretty sure the money you pay them for your bond is taxable again, to offset the write offs from the training.
Writing off costs is not a magic spell to give you unlimited money. They still pay for the training. The money still needs to be earned and paid. It only affects the taxes they pay.

It’s deductible but by who is up to how the bond is paid

Everywhere I look there’s bond requirements for both ames and pilots. I don’t see any jobs out there where their policies allow for un bonded training…

That happened to me on my first endorsement. The instructor said usually need a minimum student body count to put them on but they are taking whatever students they can get at that training facility
