What do you think he's going to do with your email address?

If you're that worried about it, create a new email address and use that.
I did send my email address multiple times, and no refund.
I knew he never had an intention to refund my money.

2) complaining on an aviation forum and wanting to complain to the guys boss is such a Karen thing to do.
You are absolutely right about the law.
Some people just don't understand how the law works.
I did send my email address to Lindsay multiple times, and no response.
He never had an intention to refund in the first place.
Is informing his employer about his scamming activities a Karen thing to do?
Yes. It is. How on earth do you think it's appropriate to contact one's employer to complain about a marketplace transaction? I asked you once already if you really believe the chief pilot has any interest in being involved in something that is not related to the employee's job on his personal time.

Pretty much all the responses here tell you what you need to know about the situation. It's not even worth the space in this forum. Go deal with this on your own and if you can't illicit a solution, then you've at least learned a valuable lesson, I hope. Good luck.

Done

Oh and there was an offer and acceptance. I believe it’s a court enforceable contract. But I’m no lawyer.

You are correct that there was an offer, consideration, and acceptance. In case of breach of contract - which in this case is true - the distressed party (the buyer, and original poster) is entitled to a remedy. Given that the selling party is taking measures to return the money via the e-transfer email, and that the buyer did not state any other losses from the breach of contract, it is not likely the court would award as damages anything other than a refund.
