From my perspective, I would have to vote for Moncton. I was there on a visit a couple of months ago and have to say that I would move out there to work at a drop of a hat. There are a great bunch of gays and gals working there. The working relationship between the controllers and management seem to be much healthier than other centres that I have been to (certainly better than the centre that I currently work in).

I only have access to 2 centers with my scanners, Montreal's northern hi alt airspace on 133.97 which used to be assigned to Toronto center until 2 years ago. And Toronto center on 128.3. Since our northern Ontario airspace is kind of quiet during peak periods (when adjacent sectors YYB and YSB) split away, the controllers occasionally open up some conversations, just to make sure everyone understands the rules and procedures. Plus, when 2 + pilots are in for an approach, especially during bad weather, the non radar holding procedures get long winded which is awesome.
For Montreal, it's mostly hearing oceanic flights going out to the Atlantic. The benefit with them, bilingual!

Don't want to be bias...but I didn't like YYZ soo much! The terminal guys are always soo busy & stressed!
Don't get me wrong, it's efficient! But I guess all controllers can be like that when you have sooo many airplanes in the sky..

Controllers having a sense of humour? I think you'll find most controllers do even though we might sound irritated 95% of the time
I find there's too many pilots out there with a sullen blah voice on the radio, sound like their stringing up their own noose in the cockpit.
Especially for me considering all the pilots I work have "made it"
