Question for all the controllers out there: what extra info does ADS-B allow you to see about an aircraft that you're working?

Not a controller but I've been told they get TAS, so pilots have to be a bit extra careful about being more than 5% off on their planned TAS as well as with crossing restrictions during a STAR

TAS and IAS are optional in ADS-B, and if you have a look on adbsexchange you'll see that none of the airliners seem to actually have it. They do all seem to have FMS set altitude and heading, so the controller can presumably see if they have set those wrong, if their display shows those values.

STAR stands for standard terminal arrival routes.
Not sure where you got your acronym from.
Yes, they can see what you’ve selected in your alt selector in bugged for IAS.
