Flying Air Canada to YUL & connecting to Air Transat going to CDG... What options do I have if the flight from my home airport, to YUL is cancelled & that is the last flight of the day..???

None, a connection on a different carrier especially one that isn’t code shared is not the 2nd airline’s problem.
