if you are using an infrared camera you can select either white or black being hot, depending which one gives you the better contrast for what you are trying to see.

Grimey is right. An IR camera would show a real fart at the same temperature as the body. Regardless of what the camera is set to (black=hot or white=hot), there is obviously a temperature difference between the fart and the ass.

could it not still show up darker than everything else because it's actually warmer than skin temperature? On the outside we're not that warm, but what comes out is obviously inside temp. That's what I'm thinking.

Except that in this case, the camera is set to white=hot (look at his arm). Given that fact, it's obvious that what's being released is colder than the surrounding air...which is consistent with the cooling due to decompression of a gas being expelled from a pressurized container.
