Currently I am working as a pilot outside of Canada.
My Canadian Multi-IFR rating will be expired soon. About 3 months ago,
my company sent me to US to do A320 Initial Type Rating. I did a check ride (PPC)
with a FAA registered examiner. Would it count to renew my IFR in Canada?
or should I do the ride in either a Simulator or A/C with a TC registered examiner?

No, it does not count towards your Canadian IFR. I have been down that same road for a couple of decades now.
There is some very good news though. As you are working outside the country flying for a commercial operator, you fall under CAR 421.49 Renewal of Instrument Rating, Section 6.
It effectively freezes your need to redo your written exam. The IFR will lapse after 2 years, but you won’t have to rewrite the exam like you would had you not renewed the IFR after 4 years. In reality, if you are flying an A-320 somewhere outside of Canada who cares if your Canadian IFR is valid. (I am assuming that you are flying on a true local license and not one that is merely validated off of the Canadian one.)
I used this CAR for years while flying for an airline in Brazil.
If/when you move back to Canada to work, you can renew your Canadian IFR during your company training.
This only works for a commercial company. If someone flies for a private company outside of Canada, such as I do now, you will have to renew the rating yourself, fly Transport down to your sim training or find a designated examiner at the sim company.
This is too much hassle for me so I just renew it in Canada a little bit shy of the 4 year limit. 2.5 hours of flying around in a little twin in Canada every 4 years isn’t really that expensive on a per year basis, and is extremely humbling.
You should fill out the paperwork for TC to put the type rating on your Canadian license. It is pretty simple. The last time I checked, you had to do it within one year of your initial course.
If you wish to do this, call TC and talk to an inspector. Advise him/her of your situation, and send your paperwork nominally to this inspector. It is much easier that way.
