European Airlines Hiring Canadians
Does anybody know of any European airlines hiring Canadians?

In the past, some airlines such as Ryanair would hire Canadians or others without an EASA licence, but they'd get you an FLVC and give you 12 months or so to complete the requirements to convert to EASA. You would still need a European passport and the right to work in Europe.
I was wondering with Brexit if anything might change in the UK for ICAO licence holders, with perhaps an easier conversion?

No. Europe does not have a shortage of pilots, unless you fly a very-specific type and have exhaustive experience on it. Work sponsorships in Europe are utterly complicated, and with the UK out of the EU, you have very limited options. Best way to go is to get your permanent residency (some airlines are fine with PRs) in a EU country, convert your license and try your chances.

Speaking the language is also an unwritten requirement in some EU countries.
Always fly a stable approach - it's the only stability you'll find in this business
